Can anyone tell me the approx. thickness of the typical 89 body from a reputable builder?
I'm starting to think about producing parts from my DOJ molds and just wondering what the typical thickness is used. I know builders generally blow the material in, but I will probably be hand laying it.
Also, if anyone knows, is a gel coat used?

Hand layed fiberglass is a lot stronger, always choose that.
It's only a lot more work, but the quality from the body depends off it.
A gel coat is not really necessary, because it's actually only a "paint" layer to make the product look nice.
Personally I should use gel coat.
The strenght is not only decided by the thickness of the body, but also by the number of layers fiberglass mats, because there are fiberglass mats in a different thickness, so it also depends which one you use.

Thanks for your response Diante. I'm using 1-1/2oz Chopped Strand Mat And had thought about doing 2 layers, then a thickening mat, and then a final layer of Chopped strand mat. What do you think?

That's good, always start with a thin layer, after that you can use thicker ones.
You have to see for yourself how strong you want to have the part, you can always make it thicker till you reached how you want it to be.

Actually a thin layer at the start to capture all the details, then bigger.
Below 6mm thick I think it's too thin.
I also think that some parts should be thicker than others.
Or reinforced. Because the bodykit must not be ultra rigid or too sensitive to torsion.
This is why I think that some parts can be thinner than others. And vice versa.

If you really want to build a strong warp resistant body, I would suggest
Primer gelcoat
1/2 oz mat
1/2 oz mat
2 oz mat
Hybrid mat/roving
-45 / +45 bidirectional
Each as an individual layup to minimize heat buildup while curing
