I am concerned about the space in the cockpit, as I am 6'3" 260+....curious if other larger humans made it happen

I am 6'3" 260+ I think Keaton is fairly small. That said, I have no Idea of the space in the '89.

Welcome aboard Kevin
You will be squeezy in the car at that size.
There is not much room for wide seats, and not a lot of head room.
Send crow23462 a message on here...as he might be about your size

Yep that is my size and i fit will only a couple of issues ... your knees will hit the dash . On right side
And you will need to lean to look out the windows
The cockpit will close no worries but before you drive get that ac hooked up its a must no mater where you live .
Wide seats will fit very snuggly.
Can you drive this car absolutely will it feel like a lexus ... absolutely not
Also remember you are building the car you can change cockpit to fit your needs and size to a point .

I can tell my right knee is going to have a problem with the existing dash design...but plan to use a little creative license with the dashboard design and layout...I want most of the same stuff but I want to have cameras as rear view mirrors with the screens on the dash, and a tablet in there too so its my little bat computer. I mean....The Bat would definitely have upgraded that thang by now.
Glad to hear that its possible....people dont know the struggle of being an ogre lol

Check your local DOT rules on rearview mirrors. Much to my dismay I learned my state doesn't allow video screens to be used as rear view mirrors.

I actually got the idea from the ventriloquist "comedian" Jeff Dunham...he has a completed 89...and he said he had to use the the video screen rear views in order for it to be street legal...and thats in CA, so Im good with that...There are some videos on youtube about it...got me excited haha
